Does the day count include the start date?

It computes the difference between the two dates, so January 1 to January 2 is 1 day. If your use case counts both endpoints (like hotel nights vs. days off), simply add 1 to the result.

How are years and months converted?

Conversions use averages — 30.44 days per month and 365.25 days per year (accounting for leap years) — so they are close approximations. Rely on the day count when you need exact numbers.
